Orange Chicken and Broccoli

Ingredients
- 2 tsp canola oil
- 1 lb boneless, skinless chicken breast cut crosswise into 1/2 inch strips
- 1 tbsp fresh ginger minced and peeled
- 1 cup broccoli cut into florets
- 1/4 cup water
- 1/2 cup low sodium chicken brother
- 1/4 cup orange juice
- 3 tbsp reduced sodium soy sauce
- 1 tsp corn starch
- 1 tbsp water
- 1 orange peeled and sectioned
Instructions
- Heat oil in a nonstick skillet over medium-high heat. Add chicken and cook for 3 minutes.
- Add ginger and cook for 2 more minutes or until the chicken is cooked through.
- In the same skillet, add broccoli and 1/4 cup water, stirring to scrape up the browned bits from the bottom of the pan. Cover and cook until the broccoli is tender-crisp, 3-4 minutes.
- Return chicken back to the skillet. Stir in chicken broth, orange juice, and soy sauce. Mix cornstarch with 1 tablespoon water, add to the pan and cook, stirring frequently, until the sauce comes to a boil and thickens slightly.
- Add orange sections and cook until heated through.
