Ingredients

  • 1/4 cup mushroom (sliced)
  • 1/2 cup extra lean ham (cubed)
  • 1/4 cup avocado (cubed)
  • 1 whole egg
  • 2 egg whites
  • 1/8 cup low-fat cheese (grated)

Instructions

  • Lightly whisk eggs and egg whites in one bowl while warming up a small skillet on the stove.
  • Once skillet is heated, spray with cooking spray and add in ham.
  • Once ham has warmed up, add eggs and let cook. When the eggs are halfway done, add mushrooms and half the cheese and let scramble. Add avocados towards the very end, so they do not brown.
  • Put on plate and sprinkle the rest of cheese on top, season to liking and enjoy.
